XS ORLANDO PRESENTS XSQUISITE FOOD FOR THE ADVENTUROUS AND THE MAIN STREAM

Oriando, Fla. - Take dining to the next level as you indulge in XStreme food and XSceptional service in a high energy, high-quality restaurant unparalleled in Central Florida. XS Oriando features a 240-seat casual, fine dining restaurant on its first floor highlighting steak and seafood with a Mediterranean twist in a South Beach, art-deco setting.

As guests enter XS, they are transported to a world where their dining and entertainment
options and opportunities are limitless. The trendy building, literally "bursting at the seams'" has a futuristic and fun appeal.

The restaurant, which serves lunch and dinner, is orchestrated by local restaurateurs, award-winning Francesco Abbinanti and Rosario Poma of Key W. Kools and Pacino's restaurants in Kissimmee, and has a casual and unconventional atmosphere.

A 45-foot tall atrium showcasing a full-service copper bar and lounge area with 6x8 video screen welcomes guests as they come in through the glass doors of the main entrance. XSperience a South Beach art-deco feel, complete with terrazzo floors, marble tabletops and ultra suede, custom-designed furniture. Bronze, brushed aluminum, stainless steel, and copper replace the wood surroundings you would find in a typical venue.

Guests can choose from an XStensive wine collection with more than 100 different types of wine from all over the world, featured in a mosaic-tiled wine display. The finest steaks, freshest seafood, and the most original appetizers and desserts have been developed to perfection by Chef Francesco and Executive Chef Christophe Pouy of France. Take a glance from your seat into the open show kitchen to view the finest, presentation-style cooking of hand-cut steaks and seafood prepared over an open, oak-fire grill.

Enticing the guest to taste more, the starters include Beignets of Hand Dived Oysters, Roasted Rope-Grown Black Mussels, pan-fried Escargot, and others, which XS prepares with a special blend of ingredients. For instance, the oysters are prepared with fresh watercress, celeriac remoulade, tomato coriander coulis and curry oil, while the mussels are created with lemongrass, saffron, coconut broth and garnished with cilantro.

XS Orlando has brought an incredible blend of ingredients to the featured menu. The grilled steaks and chops are served with onion straws and a choice ofbearnaise sauce, peppercorn sauce or cabemet sauce. A 965° open, oak-fire grill is one of the key ingredients in creating specialties such as a 32-ounce Porterhouse, 20-ounce Lobster Tail, oak-grill marinated salmon, and an 18-ounce Veal Chop.

The grill produces a steak like no other as oak-smoke permeates inside the meat and the temperature of the grill sears the juices. Of course, XS' other mystery ingredients complete the meal and are key to the final presentation.

The Oak-Grilled Marinated Salmon is prepared with a fruity couscous, toy box tomato, drizzled with pepper relish and roasted piquello aioli. Another featured item is the Pan-seared Ahi Tuna, served with horseradish mashed potatoes, fennel confit, balsamic fig jam and crispy leeks.

For the more adventurous, XS offers Roasted Colossal Pacific Prawn, which combines clams, mussels, braised fennel, confit garlic, and tomato butter sauce and tossed with linguini. Daily specials will include such extrinsic items as Farm-Raised Rabbit.

Soon-to-be popular items at XS are the brick-oven flat breads which include BBQ chicken brick-Oven Flat Bread, Norwegian Smoked Salmon, Wild Mushroom and Four-cheese with marinated arugula.

To end the meal, Chef Francesco and Chef Christophe and his staff have prepared delectable desserts. These tantalizing endings include the cool "Ice Handed" Trio of Sorbets served with a tuile cookie, and the tempting Warm Caramelized Apple Tart with frozen vanilla bean coulis covered with chocolate sauce. The appetizing Roast Pineapple Diable, and mouth-watering Roasted Banana Creme Brulee are too delicious to pass, and the Chocolate Souffle is inviting.

Lunch items include an assortment of creative starters and soups, such as Chicken Bang Bang, Lobster Bisque and Caramelized Almond Petit Brie. Wood-Roasted Chicken Caesar salad, Grilled Tuna and Organic Wild Greens as just a few of the salads served.

New and innovative sandwiches, as well as the classics are part of the menu, including the Havana and BLT New Wave. Entrees such as the wood-fired Chicken Breast, Pan-Seared Shrimp Linguini Pasta, and NY Strip Steak complete the meal. Of course, wood-fired pizza and desserts are also on the menu.

Guests will also have the opportunity on the first floor to be seated on the outdoor dining patio, which seats up to 40 guests. Enjoy the Florida weather while watching the scenic view of International Drive.

XS Orlando is a full dining and entertainment XSperience. After indulging in the creative
cuisine and specialties on the first floor, a ride on the escalator transports visitors to the next level.

Over 110 interactive games, simulators and attractions challenge the minds and skills on the second floor. XSplore the "Too Much is Not Enough" atmosphere as you participate in a virtual roller coaster ride, play golf on championship courses, drive a NASCAR at 150 mph and win the hottest prizes on the best casino-style slot machines and other redemption games.

Food service is available throughout the venue. Guests can enjoy lighter items on the second floor, such as hamburgers, pizza, Cuban sandwiches and salads. A full-service stainless steel Rotunda bar and a double-paned glass bar offer specialty drinks and all the old favorites. The Rotunda Bar offers an indoor and outdoor atmosphere, food and drinks, with DJ music and live, nighttime entertainment. The Roof lop Terrace on the third floor presents a view of International Drive with more music and socializing.

Restaurateurs Abbinanti and Poma brought in Executive Chef Christophe and Head Chef Glenn Jones. Both are Michellin Star Chefs, the highest accolade given in Europe. Working on a seasonal balance. Chef Christophe, Chef Glenn and their staff are creating a menu that is fun, interesting and, above all, has an emphasis on quality and freshness with a unique style. Their team will add a distinct touch to the XSperience to make it even more XStreme.

"For me, the menu is about exceeding food expectations," said Chef Christophe. "Part of dining affair is for guests to taste new foods and new flavors using the freshest ingredients." Christophe is a modern chef, always willing to learn more and taking on new challenges, such as creating new menu items and exploring new twists to classic cuisine.

Chef Christophe brings a vast experience in cooking and managing to XS Orlando. He worked with several restaurants tliroughout Europe before being hired by Walt Disney World's Disney Cruise Line where he handled all of the scheduling and production for the restaurants and then helped launch Disney Wonder, creating the menu for the Triton restaurant aboard the ship. He also developed all of the menus for four different restaurants on the Disney Magic ship.
